This has been quite a busy week - all for good reason. I started the week down at my sister's house helping her launch her own Rodan + Fields business and watching my nephew during the day on Monday. Then I worked at the theatre on Wednesday and Thursday, gathered tons of documents for our taxes, did a TON of laundry, ran lots of errands, cooked dinner, packed and packed and packed (we are going on a family trip which I am so excited about!). And along with all of those things, I still had my normal daily chores plus I worked out several days. So my week was jam packed!
Often when I get really busy, I don't always make the healthiest eating choices. But ever since we participated in the clean eating challenge at the beginning of February we have worked hard to always have healthy snacks and foods stocked in the house. While we don't eat clean on a daily basis, we do still have clean eating meals often. And one of those meals has been my saving grace during this busy week.
So the one thing I couldn't live without this week was my tomato caprese salad recipe. This has quickly become my favorite lunch, I make it ALL the time. And I had it for lunch several times this week. I love that it is super healthy, really yummy and extremely easy to make. Allow me to share the recipe with you!
Tomato Caprese Salad
Ingredients:
1/4 cup whole wheat pasta
1 cup grape tomatoes (sliced in half)
2 oz fresh mozzarella
1 TB olive oil
1/2 TB balsamic vinegar (or however much or little you prefer)
Instructions:
1.) Cook the pasta according to package directions (about 10 minutes).
2.) While the pasta is cooking, slice your grape tomatoes and fresh mozzarella.
3.) In a bowl, combine olive oil and balsamic vinegar. Stir. Add tomatoes to bowl.
4.) When pasta is finished cooking, drain and rinse with cold water. Add pasta to bowl.
5.) Top with cubed mozzarella.
6.) Stir and enjoy!!!
(You can also add spinach or basil to this yummy lunch.)
There you have it! This meal has been my saving grace all week long. In fact, I can't wait to fix it again very soon.

That recipe has looked delicious since I first saw it! I love fresh mozzarella--this would be super perfect for BBQs in the summer and spring especially!
